If you don’t want having it on the Toolbar you can always go to the ‘View’ menu of the menubar.

View → Sort Albums
Sort all digiKam Albums by Folder, by Category or by Date.

View → Sort Images
Sort
all images in current Album by Name, Path, Date, File Size, Rating, Image Size, Aspect Ratio or by Similarity, the latter only in the Fuzzy View.

View → Image Sorting Order
Select whether images should be sorted in ascending or descending order.
