GIMP's Hue, Saturation and Colour layer modes

I sometimes flick through all of the layer modes to see what they do and wonder about 2 of these. Hue for instance seems to be more of a dodge and burn based round mid grey doing nothing. Saturation seems to desaturate and do nothing else.

What I would expect them to do is shift hue and saturation based on shade of grey and opacity but maybe I am missing something and they should be used to do this in some other way ??

Not all that useful for photography by the look of it. Pity really. It seems that CS6 does do something along the lines of what I mentioned. On the GIMP saturation may reduce if done very slowly but no way to increase it.
