As you can see in the photo above, I’m having trouble trying to figure out how to prevent the weird saturation from happening. This isn’t from any direct editing I’ve done (they appear in thumbnails as well), but it’s affecting all photos. Does anyone know if I had accidentally toggled a setting, and if so, I do I turn it back off?

It looks like you activated the focus peaking mode. You can turn it off via the button in the bottom right side of the image or via ctrl+shift+f.
Also, I noticed the version you are using is old (3.4.1.1) ~2021Feb. The current release version is 4.2 and 4.2.1 should be release in the next couple of weeks. There are new modules, bug fixes and more camera support if you move to 4.2.
