ISO Low - Medium - High?

When I was a kid, Adox KB14 was among the least grainy films we could buy.
14 indicated 14 DIN, which meant around 20 ASA.

RT offers profiles for Default, Default ISO Medium and Default ISO High.
Using today’s digital cameras, what ISO values are meant with low, medium and high?
Would these values or areas be the same for sensors with a Bayer or an X-trans matrix?

Differs from camera to camera. Zoom in to 100% and see what works best for you.

Personally I pretty much never perform noise reduction on the luminance channel (and therefore never use “Default ISO Medium” nor “Default ISO High”), only on chrominance. It leaves a nice filmy grain.
