Do you mean something like this? (which I did with GIMP)
I mean more like a circle where the inside of the circle is only black and while and other things outside have colors. I don’t mean a circle like “painted” i mean this gradient circle.
You can start with your color image, then duplicate this layer in GIMP. Desaturate it.
Add a layer mask and paint on it as needed.
