I would like to switch to filmic workflow… what should I do with the existing XMP files?
Delete them and import all the images again?

You can keep your edits and work with duplicates : darktable 3.7 (development) user manual - duplicate manager
Deleting all XMP files wouldn’t do all that much, I guess, as the same data are stored in the dt database.
Aside from that, removing all existing edits means you have to edit all your images again from scratch. I much prefer to go through older images and rework only those for which a re-edit could be useful. For those, I create a duplicate. That way, I can compare the old and new edit, and can redo images when I have time.
Also, no need to re-import anything that way
I would not delete your existing XMP files, you will loose all your work.
You could create duplicates of your photos and restart using the filmic workflow. You could assign a tag or a colour label to these new duplicates to keep overview and separate them from the old. Once you are happy, you can always remove the old versions.
This is what I did when I moved all my edits to scene-referred. I duplicated my old images and discarded history on the duplicates (to reset to scene-referred defaults). When I was happy that the new edit was as good or (usually) better than the old one I exported the new image and deleted the original version.
The difference between old/new was often night and day - the scene-referred edits being far superior and with fewer processing steps.
