This is what works for most of my images as well, but there is one out of ~20, where the amount of control given by all the settings is valuable. These days I even tend to use sigmoid instead for 80 %, typically with the standard settings as well. Mostly pictures with overexposed areas where I have to fiddle.
So, simplification is one thing, but having the choice and control is the other. I personally am a big fan of “expert settings” where these settings are hidden by default and only show up after pushing the “expert settings” button.
