There are two possibilities:
No. XMP files are not written for DNGs. The XMP data is embedded.
I would recommend you to get the latest darktable version from OBS. This is just an alternative repository to get newer versions of some apps that are not yet available from the standard Debian repository, and it is very easy to use. It is also an ‘official’ darktable repository, so you’re sure that you’re getting the real app.
The link for the OBS darktable repository is this:
Install package graphics:darktable / darktable.
You just select your distribution and directly download the binary package. In this case, Debian Next, as that was the name of Debian 11 at the time the package was generated. How to install the package will depend on your desktop manager (Gnome? KDE? XFCE?), but usually right-clicking on the file should give you the option to do it.
Note: normally I would recommend you to use the “Add repository and install manually” option, as it gets you latter the updates automatically. But you’ll have to wait for the OBS page to mention Debian 11 for that, because for future package versions Debian Next will not be Debian 11 anymore.
So you can use the find command to find all your dng files, then have find execute the exiftool command to extract all the original raw files.
But why should I do this?

So, I downloaded it but do not know how to install it on Gnome with X11.

This produces similar errors (with small “i“).
There are missing dependencies and I do not know how to install them.

Just to clarify: Debian 11 is not currently Debian Next, it was until it got released. Debian Next now is what will eventually become Debian 12. If the package on OBS was built before the Debian 11 release, then you can use that on your system. If it was built after, then it may not work.
If you look at the versions needed they’re all higher than the ones available to install in your system. This probably means that the package was built after Debian 11 was released and libraries were updated. You won’t be able to install it on your system, at least not without some pain later… Sorry to lead you astray.
At this point you can try with the one for Debian 10 (again, it may work or not), wait for Debian 11 to appear in OBS, or go the Flatpak route suggested by @paperdigits.

I don‘t know what a flatpak is so far.
In the meantime there was a Debian system update with the notice that also DT 3.6.1 can be installed. I confirmed and after restart DT was completely defect. There appeared a spinning wheel and then DT was gone silently without an error notice. So I installed 3.4.1 with the Synaptic package manager and now this old version is here again at least.
Today I learned in darktable’s IRC channel that the Debian backports repository for Debian 11 has darktable 3.6.1. You can read about the backports and learn how to use it here.
I added
deb http://ftp.at.debian.org/debian bullseye-backports main
to my Synaptic package manager and loaded the lists anew but the newest version of darktable displayed is 3.4.1-5 which I already have installed.
Don‘t know what‘s wrong.

I may have missed some nuance…but I have run some Ubuntu and Debian distros on WIndows using WSL …I always wanted to use the latest dev build so I would just down load the *.deb from here…it would install and I would run it…so I think you could likely do the same…
Going from the install section on Darktable.org
This was tried before. It does not work as you can read in previous posts.
Check the section “Installing a Package from Backports” in the link I provided. What’s happening is that the repository is configured in such a way that, by default, no package is upgraded (technically: the priority of the upgraded packages is so low that the automatic method won’t pick them). This is to avoid the backports polutting your system with many new packages, when you maybe wanted one or two.
To install a package from backports you need to force the use of that repository, using:
apt install -t bullseye-backports darktable
Ah, that worked! Very nice! So I can test which problems remain.
My problem aside from being new to Debian (and darktable) is that English is not my first language. So additionally to my technical lack of understanding comes a touch of a language barrier.
Furthermore Debian -- Package Download Selection -- darktable_4.0.0-1~bpo11+1_amd64.deb writes that it is recommended to install darktable through a packet manager. Because of this I used Synaptic.
