Best image processing textbooks

When I got my CS degree I made a big mistake and didn’t take the “Image Processing” class. I don’t mean 3D graphics. I’m mean 2d bit graphics. Discreet math and all.

What are the best texts? I’m too old to audit a real class.

My favourite textbook on image processing is by Burger & Burge (2016).

So far I’ve found Fundamentals of Digital Image Processing to be quite readable, not been through it in its entirety though! The fact it uses examples in matlab hasn’t been a problem for me yet, even though I’ve never used matlab.
