Why do we care so much about color, when some lines are enough? See here

I was quite confused when watching the animated video, as I just saw a black-and-white video with a colorful grid (well the skin in between the orange lines looked a bit blueish, but that’s not much of a surprise) - I didn’t see the point of it. When scrolling down I finally saw the effect in the GIMP screenshot and the example with lines. All the other examples didn’t work for me. Maybe my colour-cortex is a bit underdeveloped
Everyone perceives or makes sense of things differently, some more than others. It doesn’t necessarily have to do with someone being underdeveloped or having a disability, though those are certainly contributing factors.
