I can’t find the keyboard shortcut to assign 1-5 stars.
I can only assign with the menus and the mouse.
The keyboard shortcut Shift + 1-5 selects.
What is the shortcut to assign 1-5 stars?

Mouse of the stars in the browser and you’ll see the number 1 for 1 star, 2 for 2 star, etc. Mouse over color designation and you’ll see Shift-CTRL-1 for Red, and the rest listed as well. Also it’s in the link you left, see:
Sorry, I didn’t realize that it also works on a AZERTY keyboard, where you normally have to press the shift key simultaneously.
But shift+1 is the selection of 1-star files.
Unlike QWERTY, on an AZERTY keyboard you have to simultaneously press the shift key to get 1.
These commands only work in SETM mode (Single Editor Tab Mode). Maybe this is your prpblem …
