Before I update my macOs to Sequoia (v. 15), I’d like to ask: has anyone tried darktable on it? Does it still work including opencl? Or in other words, is opencl still present in Sequoia? (People are discussing that Apple plans to drop its support.)

That is a question for an Apple site or forum…
But a quick look seems to show that OpenCL is not present in Sequoia “out of the box”, there may be a possibility to get OpenCL working, but that’s something I can’t help with
not a helpful answer - just guessing around and pointing to stuff not really understood 
darktable runs fine on macos15 and makes use of OpenCL without a need to install further stuff.
And in addition to Martin’s answer:
darktable runs fine on macOS 15 on both Intel (x86_64) and Apple Silicon M1, M2, … (arm64).
