The macOS packages are unsigned, you might need to allow execution via terminal: " xattr -c <path/to/application.app> "
If your iMac is is at least 10.14 you can try the bugfix build at current OSX Build - #697 by MStraeten
In short, no ! My entire machine decided on a go-slow after I tried and all my apps took minutes to load. I timed Lightroom at over 5 minutes to load !
In the end I spent a couple of days deleting the bits of darktable that had loaded and moved all my pictures and music to an external drive. I re-established connections to the picture catalogue and sorted out the shared drives for music so I am now back to where I started - operating normally but without darktable.
My next attempt will be to load darktable onto my laptop as it has the latest OS and should be good to download. Then I’ll transfer specific pictures that I want to use darktable on but keep my catalogue on the external drive.
Unfortunately, I decided to install a new bath in our bathroom and, as usual, it’s a lot more work that I had expected so I’m a bit slow with testing darktable again.

Darktable will have no trouble working with images that are located on an external drive. The universe of MAC is a world I will not delve into. Windows is bad enough. I am off to Vietnam for three weeks of chaos and recovery time. I believe I may have taught your partner, Ann, in my recent camera class if you are the Jed she referred to.
darktable doesn’t move images around unless you explicitly use the move function. even in copy and import mode darktable copies from the source to the target defined by you and keeps the source files untouched…
At least darktable doesn’t handle music files so better try to find the real issue instead of blaming darktable…
