InfoHeader fit say one hour less

In the conversion that Siril do on the .CR3 Canon files I realize that the date of creation (convert) and the date of the original raw .CR3 file are menus 1 hour (-1) in the InfoHeader of the file converted. Why? There is any setting where I have to put the UTC time in the program? Because I did not found it.

Any help please? I really need that at least the real raw time is set precise in the header .fit

Hello.

This is the UT time that is stored in the FITS header. This is probably why you are seeing difference.

Here is an example of a CR3 file (to be consistent with your example, but works the same with other files).
If I read the exif metadata with exiftool:

Date/Time Original              : 2019:06:02 08:50:11
Offset Time                     : +02:00
Offset Time Original            : +02:00
Offset Time Digitized           : +02:00

And with Siril I get:

Observation Date                : 2019-06-02T06:50:11

Which is perfectly normal.
