I noticed a thread regarding midi2lt - There is a Darktable alternative ( a la diy ). Its on github and its called midi2dt. The software is basic but it allows one to map certain functions in Darktable to a midi controller (eg Beringer X Touch Mini). I haven’t set one up yet, but it looks like a viable options.

Probably. With DT 3 there came so called dynamic shortcuts. You can activate a slider with a key press and then change the slider with the mousewheel. For example I’ve assigned E+mousewheel to change exposure. It might be possible to assign a wheel on the midicontroller to the mousewheel.
Actually, with the dynamic shortcuts you could argue that a loopdeck is actually an inferior solution to an actual keyboard. With dynamic shortcuts I don’t need to keyboard input devices on my desk.
