Quick question: In Art, I can adjust the contrast threshold for sharpening. Can I do that in Darktable? If so, how?

Depends on which module you use for sharpening:
demosaicing module:
For all other modules you need to activate a mask and use this slider:
on both you can see the masking when you click on this icon:
