UPDATE: issue has been solved on the darktable side (need to build from latest master) but you still need to manually copy gspawn-win64-helper-console.exe in Gimp bin directory or wait for Gimp 3 RC2. More details here.
I installed Gimp 3.0.0-RC1 (Windows) and built and installed darktable from master and Gimp doesn’t list dt in Preferences / Image Import & Export.
The –gimp version parameter seems to be working properly:

I believe this has been discussed as a problem from GIMP.
I see this has also been discussed on Github and it looks like it is being addressed so hopefully my next weekly build for Windows will see GIMP and DT being friends again.
@Tobias Yes, it was working fine on Linux but there were some issues on Windows. We worked with the darktable developers to make fixes on both sides, so hopefully it will be resolved for everyone in the next releases of both software.
Just FYI: rebuilt dt (Windows) and unfortunately it still doesn’t show in Gimp plugin list. I even added explicitly \Program Files\darktable\bin to the path just in case but to no avail.
On a side note: gimp 3.0RC1 + dt from today’s master (built 11/16/2024) work flawlessly with Linux Fedora 41.
