The street markets here are always a splash of colours. Most vendors sell their ware from carts as all are unlicensed, and they can wheel them away when the administration wishes to crack down. Most of the time they are tolerant, realising the vendors are trying to eke out a living.
I’ll present some pictures over time for all of us to play with the colours and make the stall more attractive. Maybe I will show the good ones to the vendor, to give him ideas. After all, it is a cutthroat competition out there.

I think you crushed the blacks, and went overboard with noise reduction, robbing the man’s face of any details.
I’d go with something basic like this, cropping in on the man and his wares:
Friends here is the next on the series Street Market. This is a picture of a very popular street food vendor. The taste is excellent, but the hygiene is not so. How would you develop this image? Would enjoy seeing the variations of the thought processes. My development is below. Incidentally, he keeps a cat near his stall. Can’t be seen in this picture
Here is my version. Partially with darktable, for a preliminary linear export.
Then a film simulation was done with a script I am messing with, using Kodak Vision3 50D negative and Kodak Ektar Edge print paper data. Color balancing is done with virtual filters like in a color enlarger.
